Mollring began his collegiate coaching career as a graduate assistant at the University of Nebraska-Kearney (UNK) from 2007-08.  He was elevated to a Full-Time assistant and became the team's wide receiver coach and recruiting coordinator. The Lopers finished the 2009 campaign with an RMAC Conference Championship, and 11-2 final record, and a season ending ranking of #6 in the Nation.

Mollring served as a Coach at the Elite QB Passing Academy held at the University of Nebraska-Lincoln from 2011-2015.  His 2016 and 2017 summers were spent as a Coach for Team USA Developmental Games in Kansas City and Arlington, TX where he had the opportunity to coach multiple players that moved on to the NFL and Division I levels.
